Mexican Shrimp Stir Fry

Posted on May 22, 2025May 22, 2025 by Doug

Ready to spice up your dinner routine? 🌶️ This Mexican Shrimp Stir Fry is bursting with bold flavors, fresh ingredients, and just the right kick of heat! With juicy shrimp, vibrant bell peppers, and a zesty lime finish, this quick and easy dish delivers restaurant-quality taste in under 30 minutes. Perfect for taco night, rice bowls, or just straight from the skillet—this recipe is a must-try for seafood lovers!

Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 jalapeno pepper, chopped (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions:

Prep the Ingredients: Begin by peeling and deveining the shrimp if not already done. Slice the onion and both bell peppers. Mince the garlic.

Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat.

Sauté Vegetables: Add the sliced onion and bell peppers to the skillet. If you are using jalapeno, use the portion that suits your taste. Stir frequently for about 4-5 minutes, or until they start to soften.

Add Garlic: Stir in the minced garlic and cook for another 1-2 minutes, being careful not to let it burn.

Cook the Shrimp: Add the shrimp to the skillet. Sprinkle the ground cumin, chili powder, salt, and pepper over the shrimp. Cook for about 3-4 minutes, or until the shrimp turn pink and are cooked through.

Add Lime Juice: Squeeze the juice of one lime over the stir fry and stir well to combine all the flavors.

Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve immediately. This dish pairs well with rice or tortillas.
